Caramel Cashew Carob Brownies

1/2 c broken raw cashews

1/2 c Pure maple sugar (granulated)

1/2 c oat flour

1/3 c Carob powder

1/4 tsp Himalayan salt

1/4 tsp baking powder

2/3 c safflower oil or substitute 2/3 c grated zucchini and water til you reach desired texture

1 teaspoon vanilla powder or vanilla extract

Mix together and pour in pan. Add cashews on top and bake for 20-25 mins at 350 degrees. Makes 1 dozen.

Strawberry Colada Popsicle
Popsicle trays

1/4 c canned coconut milk

3 frozen strawberries

1 fresh pineapple ring

1/4 c water

1/4 c almond milk

1 tbsp shredded/macaroon-ed coconut

Blend together until smooth and pour into popsicle trays. Freeze 

and enjoy! My kiddos LOVE these!

White Chocolate Chunks



2 tbsp Coconut oil
1/2 tsp  raw cocoa butter
1 tsp coconut cream
1 tbsp powdered stevia
1 tsp maple sugar
1/2 tsp honey
1/2 tsp vanilla powder

Melt coconut oil in the microwave or over stove for about 15 seconds. Stir in cocoa butter (if it is in shavings  that would be best) Cocoa butter should melt as you stir. Add in remaining ingredients and stir to thicken. As the mixture cools it will begin to solidify. Put down drops on wax paper and place in the freezer. It will take about 10 mins to become solid. These are good for snacks and candy bars or even to dip strawberries, fruit, or nuts... not for baking unfortunately. I'm working on a mixture that would taste good for baking. I have tried other non-dairy, non-sugar recipes and I have to say that some of them were down right disgusting. This however is absolutely de-lish!!! I realized that the secret is that cocoa butter should be more of a flavor instead of a main ingredient and that soy powder is gross. =)


Sugarless Sugar Cookies say what???



3c oat flour
1tsp baking soda
2 eggs
1 1/4c maple sugar and truvia mixed
1tsp vanilla
1c smart balance or earth's balance softened
1/2tsp baking powder
Coconut icing from below

Mix ingredients thoroughly and bake 350 degrees 10-15 minutes. They spread in the oven so be sure to space them on the cooking sheet. After they cool then spread coconut icing on top.



Baked Donuts and Coconut Icing




Donuts
2 cups oat flour
3/4 cup sugar (mix of truvia and maple sugar)
2 teaspoons baking powder
1/4 teaspoon fresh ground nutmeg
1/4 tsp Pink Himalayan salt
1 cup almond milk
2 large eggs, lightly beaten
2 tablespoons earths balance butter or smart balance butter, softened
1/2 tsp vanilla extract

Coconut Icing

1 can coconut milk
1/4c maple sugar
1/4 c truvia (granulated stevia)
1/2 tsp vanilla powder

Place can of coconut milk in fridge until cream and liquid separate. Whip the coconut cream until it becomes like the consistency of whipped cream. Slowly add sugar and vanilla while whipping. I added one drop of red food coloring because my son wanted pink frosting. =) it is SO SO SO SO SO SO (etc) GOOD!!!
