1 tbsp granulated stevia (lets be honest, 100% juice concentrate isn't very sweet)

Stir ingredients in a sauce pan over medium heat until gelatin and stevia are

Cinnamon Maple Caramel Popcorn

2/3 c Maple Cugar
1 tbsp honey
2 tbsp Smart Balance or Earth Balance butter
1/3 c truvia or stevia
3 tbsp water
1/2 tsp cinnamon
1 cup un-popped popcorn

Put mixture (everything except popcorn) in a pot over medium heat. Stir often. With a candy thermometer test the temperature until it reaches 250 degrees. Maple sugar will burn if reaches much hire or around 300 degrees. Let mixture cool while you air pop the popcorn. Then drizzle the caramel over the popcorn. Stir popcorn to mix. THIS IS SO GOOD. No one will ever guess that there is no cane sugar in this! I made it for a movie night this last week and it was gone SO FAST!

Gummy Vitamins
So I didn't mean for this page to be all gelatin but I guess I have been having some fun with it lately.
2/3 c Simply Cranberry Cocktail juice
2 tbsp unflavored gelatin
1 tbsp truvia
2 tbsp liquid vitamins 
Cook first 3 ingredients in pot over medium heat until gelatin and truvia/stevia is dissolved. Pull the pot off the heat and let it cool for a few minutes before adding the liquid vitamins last (you don't want to sacrifice any vitamins by heating them up.) Pour contents into small molds. I used silicone ice cube trays that I got from Michaels.

Jello Filled Grapefruit



2 tbsp unflavored gelatin
1 1/4 c 100% juice
1 tbsp granulated stevia
2 grapefruits

Cut grapefruits in half and clean them out with a melon baller (creating dishes out of the halves). Stir ingredients minus the grapefruits in a sauce pan over medium heat until gelatin and stevia are completely dissolved. Pour mixture into the grapefruit halves and chill until the jello is formed. Cut into slices and serve.
So my nephews and nieces LOVED these. We didn't make enough and they were not happy about it!
