Blueberry Colada with Coconut Whip Cream
Blueberry Colada-

1/2 c frozen blueberries

 1 tbsp of canned coconut milk

1 tbsp shredded/macaroon-ed coconut

2 rings of fresh pineapple 

1/4 c ice

1/4 c almond milk

1/4 c water

1 tsp truvia or stevia

Blend all ingredients until smooth.

Coconut Whipped Cream-
Place canned coconut open in the fridge. The cream of the 

coconut will rise to the top and separate from the coconut water. 

Once it separates, skim off 2 tbsp of the cream and whip until it 

becomes the desired consistency of whipped cream. Add stevia 

to taste while it is being whipped. SO GOOD!!!


Chicken and Fish Marinade

1 tbsp Lemon juice

1/4 tsp salt 

1/4 tsp Pepper

1 tsp basil

1/2 tsp rosemary

2 tbsp Black truffle olive oil

1/4 c diced sweet bell peppers

1 clove garlic

Puree ingredients I used this on baked cod and it was

SOOOOOO GOOOD!!!! 

Blood Orange and Raspberry Vinaigrette

1/2 c balsamic vinegar

1 full blood orange (minus peelings)

1/2 cup raspberries

2 tblsp stevia granules

handful of walnuts

Blend ingredients in blender until smooth. Chill before serving.

Okay okay... I will let you in on a secret... Best oil and vinegar 

store ever.... it is called.... wait for it... wait for it... Oil and 

Vinegar!!! You can order online at www.oilandvinegarusa.com. 

They have every kind of oil and vinegar you can think of!! For 

this recipe I would use the blood orange olive oil (or grape 

seed oil) and the raspberry balsamic. AMAZINGLY GOOD!

Honey Caramel Sauce
1/2 c of honey (light tasting organic)

1/4 c of pure maple sugar 

1 tsp of Earth's balance spread

Pinch of Himalayan Salt

Combine and bring ingredients to boil in a sauce pan. Use a candy thermometer and have ingredients reach 

270 degrees. Constantly stir to keep it from burning. Allow to cool to thicken. Drizzle over the top of dessert.


Shrimp and Chicken Marinade

1-2 tbsp Honey
1-2 cloves of garlic
1 lime (juiced)
1/4 c lime grape seed oil or regular grape seed oil and add 2 more limes juiced
1/4 c cilantro
1/4 tsp pink Himalayan salt
1/4 tsp fresh ground black pepper

Puree all ingredients





Carrot Orange Smoothy



1 large Carrot
1 Pear
2 oranges
2 tbsp stevia granules
handful of walnuts
1/3 c almond milk
3/4 c ice

So I have a confession... I bought a vitamix and I LOVE IT! I'm sure that a regular blender will work just fine but it may not make it as smooth as I like it.
Rinse fruit and carrot. (I did chop off the the end of the carrot and I did seed the pear but technically you don't have to.) Cut peeling off of the oranges but leave as much pulp as possible.
Combine everything in the blender and blend until smooth.
Makes about 3 servings but I drink the whole blender full!!!
