Chicken Sausage and Rosemary Black

Truffle Potatoes

1 tsp black truffle olive oil

4 red potatoes

1-2 Chicken Sausage links (I get mine from costco all-natural)

-Seasoning add to taste-

Rosemary

Himalayan Salt

Black Pepper

Garlic

Put in a pot (oil goes on the potatoes) and bake at 350 degrees 

for 45 mins or until potatoes are tender. 2 servings and great side 


Stuffed Portabello on Whole Wheat Pasta

2 Large Portabello Mushroom Caps

1/2 lb organic ground turkey

2 all natural organic chicken sausage links

1/4 cup of diced sweet bell pepper

1/4 cup of diced sweet onion

1/4 tsp Himalayan salt

1/4 tsp ground black pepper

1/4 tsp minced garlic

1/4 tsp rosemary

dash of oregano

3 c cooked whole wheat pasta (I used fettuccine)

1 c organic marinara sauce

With a melon baller, cleand out inside of the portabellos to create a dish. Warm 

marinara sauce over the stove. Steam veggies and portabellos. Brown meat and 

combine with veggies and add seasoning. Stuff mixture into the portabellos. Add 

remainder of the mixture to the sauce pan of marinara.

To plate, put down 1 and 1/2 cup of the pasta on the plate. Add sauce onto the pasta (I 

love a lot of sauce!) Add a stuffed portabello on the top. Voila! IT IS SO YUMMY!!! 

Makes 2 servings.

Veggie Coconut Curry
Ingredients

·         ¼ cup of diced eggplant

·         ¼ cup diced zucchini

·         ¼ cup diced red bell pepper

·         ¼ cup diced onion

·         ¼ cup diced radishes

·         ¼ cup diced tomatoes

·         ¼ cup diced baby bella mushrooms

·         2 handfuls of spinach

·         2 tbsp olive oil

·         Splash of soy sauce

·         1 tbsp red pepper flakes

·         Lemon zest

·         1 ¼ tbsp curry powder

·         1 tsp minced garlic

·         1 can of coconut milk (a little over 1 cup)

·         2 teaspoons of non-sugar mixture (granulated honey, stevia, and granulated maple 

·         ¼ tsp Himalayan salt

·         Top with shredded or chopped fresh basil or cilantro

     Saute veggies, olive oil, soy sauce, Himalayan salt (which is much 

healthier for you than regular salt and it is stronger too so don't go 

overboard), garlic,  lemon zest (to taste) and red pepper (add according to 

desired spiciness).

     Cook the veggies until they are "dead" which means super soft. (It helps to 

cover the pan for a while and let it soak in the moisture.) Then add remaining 

ingredients. Mix together and pour over brown rice or eat plain.

 SO GOOD I COULD EAT THIS 3 TIMES A WEEK AND NOT CRY 

ABOUT IT! WOO HOO!

Cowboy Chicken Knock off

Organic chicken breast
turkey bacon
pickled jalapenos
veggie cheese/ soy cream cheese
multi-colored potatos
seasoning
So we went to AJ fine foods and saw their cowboy chicken that they had and it looked so good. We tried it and it WAS! But it had cheese and thick greasy bacon. We decided to make it "in the pink" and we changed up the ingredients and it was (believe it or not) equally as good!!
Stuff chicken breast with jalapenos and non-dairy cheese and wrap with turkey bacon.
Bake with potatoes at 350 for about 1 hour or until cooked through. Also good on the grill!

Maple Turkey Sausage and Basil Eggs

5-6 eggs
1tsp basil
1/4 tsp minced garlic
salt and pepper to taste
1tbsp maple syrup
2 tbsp water
5-6 turkey sausage links

Cook sausage in a pan over medium heat and maple syrup and water. Cook until syrup lightly caramelizes around the sausage.
Cook eggs (scrambled) in a pan over medium heat and add seasoning. Serve together. Great for brunch!!
