Stuffed Portabello on Whole Wheat Pasta (Entree)


Stuffed Portabello on Whole Wheat Pasta





2 Large Portabello Mushroom Caps

1/2 lb organic ground turkey

2 all natural organic chicken sausage links

1/4 cup of diced sweet bell pepper

1/4 cup of diced sweet onion

1/4 tsp Himalayan salt

1/4 tsp ground black pepper

1/4 tsp minced garlic

1/4 tsp rosemary

dash of oregano

3 c cooked whole wheat pasta (I used fettuccine)

1 c organic marinara sauce

With a melon baller, cleand out inside of the portabellos to create a dish. Warm marinara sauce over the stove. Steam veggies and portabellos. Brown meat and combine with veggies and add seasoning. Stuff mixture into the portabellos. Add remainder of the mixture to the sauce pan of marinara.

To plate, put down 1 and 1/2 cup of the pasta on the plate. Add sauce onto the pasta (I love a lot of sauce!) Add a stuffed portabello on the top. Voila! IT IS SO YUMMY!!! Makes 2 servings.
